This recipe took me probably 2 years to perfect & now this year i'm going to try it with a different nut because Western Nut was out of peanuts so I had to improvise. You should try it out!
Peanut Brittle
1 1/2 C. Sugar
1/2 C. light Corn Syrup
1/4 C. Water
2 C. shelled Raw Peanuts
1 to 1 1/2 tsp. Baking Soda
1/4 tsp. Salt
Combine sugar, corn syrup, and water in a heavy saucepan and bring to a boil over medium-high heat, stirring often. Gradually stir in peanuts, without losing the boil. Adjust temperature to maintain a rolling boil until the peanuts pop and turn golden brown, remove from heat. Add baking soda, stirring well (the candy will foam up and turn golden brown). Add salt and stir well. Pour on a well-greased platter or cookie sheet. Allow room for candy to spread. (f you like thick peanut brittle let it spread on its own, if you like thinner brittle, spread it a little with the back of a wooden spoon.) When cold, break into chunks. Makes 2 lbs.
So, I know it sounds kinda complicated but it's really not. You just need to be sure to cook it enough or else it's kinda sticky & chewy but not overcook it so it tastes burnt. This year, as I said, i'm going to do it w/Cashews instead of peanuts...but I don't think it's going to effect the outcome. Merry Christmas!
